Is it just me or is the whole “4th of July on a Wednesday” throwing anyone else for a loop? The thought of planning, prepping for and celebrating at a gathering in the middle of the work week is quite an overwhelming challenge. It is rushed holiday planning like this that can tempt even the best of us to take the easy way out with pre-made, and often-times unhealthy, dishes.

The temptation had just about gotten me when I remembered the yummy, but easy-to-make, Strawberry Swirl Angel Pie recipe we shared last 4th of July! It requires minimal ingredients, only one hour of prep time and offers your guests a healthier dessert option.

Find the full recipe and instructions for Frozen Strawberry Swirl Angel Pie in last year’s 4th of July post, or on the American Diabetes Association’s website.

Quick time saving tip: No time to make your own pie crust? Purchase a pre-made crust at your local grocery store, but be sure to account for the nutritional information accordingly.

While this recipe may work great for July 4th festivities, I could definitely use a few more simple yet healthy recipes for future time crunches like this. What are your “go-to” recipes for hectic holiday planning? Share them in the comments section below!

Have a happy and safe Independence Day!

Best,
