Is it just me or is the whole “4th of July on a Wednesday” throwing anyone else for a loop? The thought of planning, prepping for and celebrating at a gathering in the middle of the work week is quite an overwhelming challenge. It is rushed holiday planning like this that can tempt even the best of us to take the easy way out with pre-made, and often-times unhealthy, dishes.

The temptation had just about gotten me when I remembered the yummy, but easy-to-make, Strawberry Swirl Angel Pie recipe we shared last 4th of July! It requires minimal ingredients, only one hour of prep time and offers your guests a healthier dessert option.
